I love the kind of cooking that feels elevated but never fussy: a roast chicken with crisp skin and pan sauce, a cozy pasta finished with something bright, a just-sweet-enough dessert, a dinner that feels considered without requiring perfection.

Here, recipes are written clearly because details matter — but they’re not meant to take all the pleasure out of cooking. I believe in tasting as you go, noticing how ingredients behave, and learning the small cues that make food better: when butter smells nutty, when onions have gone sweet, when a sauce needs acid, when “a little more” is exactly right.
