Guacamole with Candied Bacon, Goat Cheese & Pepitas

Guacamole: the semi-healthy dip that will make you lose count of the number of chips you just inhaled. Avocado is basically a blank canvas begging to be jazzed up, but for some reason, guac seems to remain pretty traditional. When visiting a restaurant in Cleveland, however, my world got turned upside down from the varieties of guac they offered. Good old-fashioned guacamole that had been layered and layered with unexpected texture and flavor, turning up the volume on this beloved dip like I’d never seen before. This is my take on my particular favorite there. It is sureeee to be a hit at your next taco night or party. Get weird, the only limit here is your own imagination.

- 3 ripe avocados
- 1/4 cup salted pepitas
- 3 strips uncooked bacon
- 1 Tablespoon maple syrup
- 1/4 cup crumbled goat cheese
- 1 Tablespoon lime zest
- Salt and pepper to taste
Directions
- Preheat the oven to 400 degrees and lay bacon on a half sheet tray lined with foil. Brush each piece of bacon with maple syrup and bake for about 9 mins then turn each piece over, brush with more syrup and finish baking for another 9-ish minutes until slightly crispy. Chop into pieces and set aside
- Meanwhile, mash up the avocados in a large bowl so they still have some texture to them. Stir in the lime juice and salt and pepper
- Finally, top the guacamole with all toppings and serve with tortilla chips
