Red Rice

Ingredients
- 1 cup basmati rice, uncooked
- 2 cups chicken stock
- 1 tablespoon Better Than Boullion, chicken
- 3 Tablespoons tomato paste
- 1 Tablespoon taco seasoning (or make your own)
- 1/4 cup onion, diced
- 2 cloves garlic, minced
- 1/2 jalepeno (not diced, just halved)
- few sprigs of cilantro
- salt to taste
- 1 Tablespoon olive oil
- 1 Tablespoon butter
Directions
- Heat the olive oil and butter in a sauce pan over medium-low heat. add the onion and garlic and taco seasoning and stir for just a couple minutes. add the rice and stir it around letting it toast a bit.
- Create a well in the center of the rice and add the tomato paste and Better Than Boullion. Let it cook together for a few minutes then pour in the chicken stock and add the jalapeƱo and cilantro sprigs. bring to a boil then cover and reduce heat to a simmer. Cook until liquid is absorbed then add salt to taste and fluff with a fork. Garnish with chopped cilantro
