Ingredients
  • 1 cup basmati rice, uncooked
  • 2 cups chicken stock
  • 1 tablespoon Better Than Boullion, chicken
  • 3 Tablespoons tomato paste
  • 1 Tablespoon taco seasoning (or make your own)
  • 1/4 cup onion, diced
  • 2 cloves garlic, minced
  • 1/2 jalepeno (not diced, just halved)
  • few sprigs of cilantro
  • salt to taste
  • 1 Tablespoon olive oil
  • 1 Tablespoon butter

Directions

  1. Heat the olive oil and butter in a sauce pan over medium-low heat. add the onion and garlic and taco seasoning and stir for just a couple minutes. add the rice and stir it around letting it toast a bit.
  2. Create a well in the center of the rice and add the tomato paste and Better Than Boullion. Let it cook together for a few minutes then pour in the chicken stock and add the jalapeƱo and cilantro sprigs. bring to a boil then cover and reduce heat to a simmer. Cook until liquid is absorbed then add salt to taste and fluff with a fork. Garnish with chopped cilantro
