Crispy Chicken Sliders With Chipotle Aioli

Chipotle mayo and pickled red onions add unexpected notes of dimension. I take a few shortcuts here and use store-bought chipotle aioli and good quality frozen chicken strips because I’m a firm believer sliders were made to be two things: delicious and easy. These are simple enough for a weeknight dinner, fun enough for game day, and sophisticated enough for a cocktail party.

What to Notice

  • Let the chicken get deeply golden and extra crisp before assembling. Frozen breaded strips soften quickly once sauced, so give them the time they need and build the sliders just before serving.
  • The slaw should taste bright, cool, and a little sharp. Add lime or salt if it feels flat, or a small spoonful of mayo or honey if it needs softening.
  • The best bite is all contrast: crispy chicken, fresh slaw, creamy aioli, and a soft bun. Add more slaw if it feels rich, or more aioli if it needs a little punch.

Ingredients

  • 1 package King’s Hawaiian rolls sliced into slider buns
  • 6-7 frozen breaded chicken breast strips
  • 6-ish slices Havarti cheese torn in half
  • 2 cups slaw mix
  • 1/4 cup store-bought chipotle aioli
  • 1/4 cup pickled red onions

Instructions

  • Preheat oven and cook frozen breaded chicken strips according to package directions.
  • Cut cooked chicken into bite-sized pieces.
  • Arrange bottom halves of Hawaiian rolls on a baking sheet.
  • Top each roll with crispy chicken pieces and Havarti cheese.
  • Return sliders to the oven for 1 to 2 minutes until cheese is slightly melted.
  • Remove from oven and spread chipotle mayo over each slider.
  • Add slaw mix and pickled red onions.
  • Place top buns on sliders and serve warm.
